New Nutrition Expert Joins U of I Extension

There's a new staff member at the University of Illinois extension.

Caitlin Huth, who is the new nutrition and wellness educator at the U of I extension, is familiar with the Central Illinois area. She is from Champaign and completed her studies at ISU in Bloomington-Normal. She is excited to reach out to the local communities by creating new programs. A couple of these programs include "Eye on Diabetes" and "Meals for a Healthy Heart".

One program that Huth particularly likes is called "Serve It Safely". It focuses on food safety for general organizations such as churches or schools. The program allows the organizations to be informed on how to keep foods safe and fresh for events such as school lunches and potlucks. Another specific program is partnered with the Illinois Department of Public Health. It focuses on food service and sanitation.

Huth says that she has also recently partnered with Kirby Medical Center in Monticello. She is planning to teach a class once a month. This partnership will involve classes that focuses on food preparation in the home.
